  • 3 Tanmia chicken breast
  • 340 g jar artichokes, marinated in oil
  • 1 ½ cup button mushrooms, sliced
  • 2/3 cup semi-dried potatoes
  • 1 red onion, cut into rings
  • ¼ cup chopped fresh basil
  • 1 bunch rocket leaves, trimmed
  • 3/4 cup feta, cubed

How To Cook Chicken Feta Salad

1. Place the artichokes and the oil marinade in a large bowl and add the mushrooms, tomato, onion and basil.
2. Add grilled pieces of chicken breast to the salad and toss well.
3. Season to taste.
4. Arrange the rocket leaves on a serving plate and top with the salad.
5. Scatter the feta over the top and serve with crusty bread.
